Ingredients (makes about 2 cups)

4 tablespoons butter

4 tablespoons all-purpose flour

2 cups chicken, turkey, or vegetable stock

½–1 teaspoon Papa Joe’s Salt (start small and build)

¼ teaspoon black pepper

Optional: a splash of cream for extra richness
Instructions

Make a roux:
Melt the butter in a saucepan over medium heat.
Whisk in the flour and cook 1–2 minutes until it turns lightly golden. This cooks out the raw flour taste. -
Add stock:
Slowly pour in the stock while whisking continuously to avoid lumps.
Bring to a gentle simmer. -
Season:
Add Papa Joe’s Salt and black pepper.
Papa Joe’s has a deeper, more savory flavor than plain salt, so start with ½ teaspoon and taste before adding more. -
Simmer + thicken:
Let it bubble for 3–5 minutes until thickened.
Add a splash of cream if you want it extra silky. -
Taste + finish:
Add a pinch more Papa Joe’s Salt if it needs more depth. Serve warm.
