Ingredients
yields 1-2 servings
1 grilled boneless, skinless chicken breast seasoned with Papa Joe’s Salt
3 slices bacon
1 large hard boiled egg
1/2 avocado
1/2 c. thinly sliced strawberries
1/4 c. chopped toasted, salted pistachios
1/4 c. scallions
Spring Mix Lettuce
Shredded cheese of your choice!
Dressing (pulse ingredients in a food processor until smooth and thick- about 30 seconds) There will be extra to save for your next salad!
1/3 c. mayonnaise
1/4 c. buttermilk
1/4 c. grated Feta or Four Cheeses (Asiago, Parmesan, Provolone & Fontina)
1 tsp finely grated lemon zest, plus 2 tbsp fresh lemon juice
1/3 c. packed fresh dill fronds
1/4 c. sliced chives
1 small clove garlic, chopped
1 tsp. Papa Joe’s Salt
Instructions
Place Spring Mix on a plate or bowl.
Layer with grilled chicken, bacon, hard boiled egg, strawberries, and avocado.
Sprinkle scallions, chopped pistachios, and shredded cheese over your salad.
Season your avocado with Papa Joe's Salt to taste.
Drizzle with dressing. So yum... Enjoy!
