Zucchini Carpacchio


2 zucchini
Juice from 1 lemon
Olive Oil
Parmesan Cheese
Papa Joe's Salt


Cut ends off the zucchini and slice thin, long-way slices with a mandolin or vegetable peeler. Drizzle 2 Tbs of olive oil over squash slices. Pour lemon juice over top and lightly season with Papa Joe's Salt. Let sit for a few minutes for flavors to absorb. Top with parmesan cheese and enjoy!
