Shell's Brussels Sprouts and Potatoes


30 small brussels sprouts
1 small bag of little red/golden potatoes
Olive oil
Papa Joe's Salt


Preheat oven to 425 degrees. Bring a quart of water to boil. Put an 'x" in the bottom of each brussels sprout. Add brussels sprouts to boiling water and boil for only 2-3 minutes until bright green. Drain and let cool. Slice brussels sprouts in half. Slice potatoes in thin slices. Add sprouts and potatoes to a large Ziploc bag. Add olive oil and Papa Joe's Salt (to taste). Go light at first with Papa Joe's as to not make mixture too salty. You can always add more Papa's later! Shake bag until sprouts and potatoes are thoroughly coated. Empty sprouts and potatoes onto a cookie sheet lined with aluminum foil or into a baking dish. Add more Papa Joe's Salt to top IF NEEDED. Bake for 45 minutes or until sprouts and potatoes are golden, browned, and crispy. My kids eat this up like candy! ENJOY!!
