Deviled Eggs-" Papa Joe's Style "

To peel boiled eggs with the most ease, start eggs in "cold" water and bring to a boil. Once the water boils, set timer for 8 minutes. Rinse eggs in cold water and peel! Cut eggs in half and spoon out yolk into a mixing bowl. (Since I do not measure my ingredients, you will have to add and taste as you go to your liking!) Fry bacon (I like maple-flavored) until crispy, but not burnt. Place bacon on a paper towl to soak up some grease. Then crumple bacon into tiny bits. Mix with yolks, olive oil mayo, spicy brown mustard, wasabi horseradish, and Papa Joe's Salt. Spoon into egg halves & then sprinkle tops with a dash of Papa Joe's Salt! Yummy, and not too spicy!

Mozzarella and Tomato Salad

Ingredients:
1 large tomato
Cream of balsamic
1 avocado
Extra virgin olive oil
Fresh mozzarella
Fresh basil
Papa Joe's Salt
1 lime

Lay tomato slices circular around the outside edge of a plate. Next, place a thin slice of avocado on each tomato. Then place slices of fresh mozzarella on top of the avocado. Last, lightly squeeze a lime around on top of the tomatoes. Drizzle with cream of balsamic and extra virgin olive oil. Top the salad off with a fresh chopped basil and a sprinkle of Papa Joe's Salt to taste. In the center of the plate, you can place a small bowl with crackers or fresh baked bread. Or, fill the entire plate with tomato salad and serve.

Bloody Mary

Rim your glass with a lime and Papa Joe's Salt before adding your favorite Bloody Mary Mix to your glass! Then, you can even sprinkle a little Papa Joe's Salt in your Bloody Mary for a zing of flavor!

Saute with Olive Oil

Start your sauteèing dishes with olive oil and Papa Joe's Salt as a base. Then if you want, add fresh onions and garlic to brown! Delicious!! (Examples: hash browns, soup starters, eggs, veggies, mushrooms, sauces, etc.)

Dipping Oil

Sprinkle Papa Joe's Salt with Olive Oil in a shallow dipping bowl. Dip your favorite loaf of Italian, French, or Sourdough Bread. This is a great appetizer for dinner parties! I really like the taste of Bertolli Extra Virgin Olive Oil-"Rich Tastes" and Pompeian Extra Virgin "Robust Flavor." You can also use this mixture on top of sweet Jersey corn, as a meat marinade, as a cooking base for veggies, etc. The possibilites for this are truly endless!!

Corned Beef and Cabbage

Ingredients
*2-4 pounds Corned Beef
*Cabbage
*Vegetables (carrots, leeks, turnip, onion, etc.) I like the soup package with the vegetables and herbs ready to go!
*2 Large cans chicken broth
*Bay leaf, herbs of your choice, Papa Joe's Salt
Optional glaze: brown sugar and mustard

First boil the corned beef (covered completely in water) according to package on the stove. Boil about 10 minutes (just until lightly cooked), then remove it and place it in the crock pot. Next, cover the corned beef completely with chicken broth. Add shredded or chopped cabbage and any other vegetables (the more the better!). You can even add potatoes if you like. Season to taste. Place the crockpot on low overnight or on high for 2- 3 hours until the center of the corned beef is no longer pink. When done, place the entire dinner in a baking dish and pull apart the corned beef to serve.

Optional Glaze: mix together mustard and brown sugar and rub on corned beef as a glaze. Bake at 350 F until glaze bubbles and browns (about 10 minutes). Remove from oven and THEN pull apart or slice the corned beef to serve.

Shell's Brussels Sprouts and Potatoes

Ingredients
30 small brussels sprouts
1 small bag of little red/golden potatoes
olive oil
Papa Joe's Salt

Preheat oven to 425 degrees. Bring a quart of water to boil. Put an 'x" in the bottom of each brussels sprout. Add brussels sprouts to boiling water and boil for only 2-3 minutes until bright green. Drain and let cool. Slice brussels sprouts in half. Slice potatoes in thin slices. Add sprouts and potatoes to a large Ziploc bag. Add olive oil and Papa Joe's Salt (to taste). Go light at first with Papa Joe's as to not make mixture too salty. You can always add more Papa's later! Shake bag until sprouts and potatoes are thoroughly coated. Empty sprouts and potatoes onto a cookie sheet lined with aluminum foil or into a baking dish. Add more Papa Joe's Salt to top IF NEEDED. Bake for 45 minutes or until sprouts and potatoes are golden, browned, and crispy. My kids eat this up like candy! ENJOY!!

Amy's Brussel Sprouts

First, clean and halve brussels sprouts and place them cut-side up on a non-stick cookie sheet. Drizzle olive oil and sprinkle Papa Joe's Salt on the tops. Bake at 400 degrees for 15 minutes. If you want, crumble bleu or goat cheese on the tops. My kids gobble them up!

Papa Joes Croutons

Preheat oven to 375 degrees. Cut French Bread into small bite size pieces. Place them in a large Ziploc bag with Robust or Rich Taste Extra Virgin Olive Oil and Papa Joe's Salt. The amount of oil and Papa Joe's you use is up to you! Next, shake the bag around until all bread pieces are fully coated. Then, pour the bread pieces onto a cookie sheet. Last, place the cookie sheet on the middle rack in oven and bake for 15-20 minutes. Check periodically so the croutons do not burn. Yum Yum-especially when they are hot out of the oven!

Quinn Delorme's Papa Joe's Spaghetti Pie

In an oven safe dish, layer pre-cooked spaghetti noodles, precooked chicken, spaghetti sauce, shredded cheese of your choice, and Papa Joe's Salt. Top with extra cheese and heat in oven until warm and cheese is bubbly!

Pasta Salad

My favorite pasta these days is the campanelle. Mix in chickpeas and grape tomatoes cut in half. Then mix in small chunk-size pieces of turkey-ham, cucumbers, and cheddar cheese. Last add Papa Joe's Salt to taste. The amount you use is up to you! Remember to "flavor" the pasta, not "salt" it! Enjoy!

Ashlee and Abby's Favorite Papa Joe's Pasta

The girls like spaghetti, linguini or penne pasta sprinkled with butter, parmesan cheese and Papa Joe's Salt! This can also be done on rice as well! Ashlee loves this combination so much, she eats it for breakfast! It's especially easy to order when you are out to dinner! Yummy!

Country Ribs

1 Rack of country pork ribs
Extra virgin olive oil
Papa Joe's Salt

Simply rub ribs with Papa Joe's Salt and a little olive oil. Bake in oven on 350 for 2 hours. Turn the ribs in the oven after one hour. If you are using a convection oven, cook ribs at 400 for 45-50 minutes on each side. Ribs will be crispy and juicy! A delicious side dish is fresh steamed green beans and small red potatoes tossed in some of the juice from the cooked ribs in the frying pan. For the green beans and potatoes, you could cook some bacon (my favorite is maple flavored) first, and then stir in fresh steamed green beans or potatoes. Very yummy!

Shannon's 5-Minute Spaghetti

Shannon's 5-Minute Spaghetti

This is one of my favorite recipes! Perfect for the busy person who wants a fast, flavor-packed dinner... it's called the 5-Minute Spaghetti.

* 2 pints cherry tomatoes
* 2 cloves of garlic, finely chopped
* 2 or 3 sprigs of fresh basil, oregano, or parsley (chopped)
* 2 tablespoons olive oil
* Sprinkle with Papa Joe's Salt

1. Preheat the broiler and put the top rack 4 inches from the top. 2. Toss the tomatoes with the oil, garlic, herbs, salt and pepper. Spread them out on a rimmed baking sheet. 3. Broil until the skins start to crack & brown, about 5 minutes. 4. Lightly break up with potato masher. Serve over pasta!

The Cheyenne Salad

The Cheyenne Salad

Ingredients:
Lettuce (any kind you like, romaine works well!)
1 small red onion, sliced thin
1 red pepper, sliced thin
1 tomato, sliced in bite size wedges
1 avocado
1 chicken breast
Limes, 1 per serving
Cayenne pepper
Chili powder
Papa Joe's Salt
*Optional: Grated cheese, either cheddar or a mexican blend

1. Lightly sprinkle the chicken breast with cayenne pepper & chili powder.
2. Grill to fully cooked, set aside.
3. Set out plates according to how many people you are serving. Line the bottom of the plate with a layer of lettuce.
4. Sprinkle red onion slices, red pepper slices, & tomato pieces over lettuce layer.
Cut avocado in half, dice avocado flesh (discard skin & seed). Sprinkle diced avocado pieces over the salad.
5. Slice the chicken into bite size pieces, and add on top of salads.
6. Top with cheese if you wish.
7. Slice limes in half, squeeze 1 lime over each salad (don't skimp on lime juice)
8. Sprinkle each salad with Papa Joe's Salt

Enjoy! This salad is so full of flavor and so healthy for you. The spiciness off the chicken is cooled with the creaminess of the avocado, just as the pepper adds sweetness and lime the sour. So many flavors just complement each other in this salad, and it's so crunchy and very filling! We make this often on the farm, everyone loves it and so many customers ask for the recipe!

Flavor of Rub BBQ Crew’s Grilled Brushetta

Ingredients
6 small/medium (3-inch) NJ tomatoes, chopped
1/2 cup sun-dried tomatoes, packed in oil, chopped
3 cloves garlic, minced
1/4 cup extra virgin olive oil
2 tablespoons HIGH balsamic vinegar
1/4 cup fresh basil leaves, torn
Papa Joe’s Salt
1 freshly baked baguette
2 cups shredded mozzarella

Directions
1. Prepare the grill for direct and indirect cooking over high heat (half of the grill burning, half grill not burning). Brush the cooking grates with wire brush to clean.
2. In a large bowl, combine the tomatoes (chopped and sun dried), minced garlic, olive oil, vinegar, basil, and Papa Joe’s Salt to taste (approx. ½ tsp). Allow the mixture to marinate.
3. Slice the baguette at an angle to make wider, 1/2-inch thick slices.
4. Lightly brush olive oil onto the cooking grate and directly grill (over the burning side) the bread on both sides until lightly browned.
5. Move the toasted slices to the indirect side. Use a slotted spoon to spoon the marinated tomato mixture onto the slices and top with mozzarella cheese.
6. Place the lid on the grill and heat until the cheese is melted.

Hess Texas Caviar-with a touch of Papa Joe's Salt

½ bag of frozen corn or 2 cups of fresh, sweet white corn

2 16 oz. cans of black eyed peas (drained and rinsed)
1 medium-large tomato diced
½ cup of parsley chopped
1 cup of cilantro chopped (use stems and leaves)
4 green onions chopped
2-3 clove of fresh garlic (minced)

Papa Joe's Salt-to taste and add flavor
1 8oz. bottle of Wishbone Robusto Italian dressing OR Robust flavor Extra Virgin Olive Oil to taste
¼ cup seeded finely chopped Jalapeno pepper


Chill overnight and let flavors mingle. Serve with Fritos or Scoops Tortilla chips.

SLOW COOKER RECIPE: Cuban Pork by Kara Whalgren

Okay, fair warning: This is a two-step recipe. I suppose you could just throw everything in the slow cooker, but it's extra-awesome if you marinate it for a few hours, so I recommend going the extra mile on this one. It's worth it. Here's what I used.

  • 1-2 lbs. pork loin (I like boneless)
  • 1 Tbsp. Papa Joe's Salt
  • 1/2 tsp. oregano
  • 1/2 Tbsp cumin
  • 3 oranges**
  • 2 limes


Step 1: Marinate. Stab the pork with a grilling fork or any other poking device you have lying around.

Step 2: Throw the pork in a Ziploc bag with the Papa Joe's salt, oregano, and cumin. And then squeeze the oranges and limes. Put the mix in the fridge for a couple of hours, or overnight.
Step 3: Cook. Dump the contents of the Ziploc bag into your slow cooker and cook on LOW for 6-8 hours.

**I think this would be awesome on a sandwich with cheese, honey mustard, and pickles. Or in a quesadilla.
