2-3 Tbs. Olive oil
3 cloves of garlic, sliced thin
6 Asparagus stalks, sliced
1 bunch of collards, cut in 1" strips
Papa Joe's Salt
1 cup reduced fat mozzarella cheese, shredded.
Pizza dough or pre made pizza crust
Preheat oven to 450. Saute olive oil, garlic, asparagus, & collards over medium heat in sauté pan. Add a good sprinkle of papa joes salt over top, let cook 5-8 mins, stirring occasionally till garlic & asparagus start to brown & collards have wilted. If pan gets dry at the bottom add a little more olive oil. Spread all this deliciousness evenly over pizza crust (see 2nd photo) Top lightly with 1 cup mozzarella cheese. Bake for aprox 10 mins just till cheese has melted, starting to brown & crust is cooked how you like it. Cut into & devour!
*Note: goes great on whole wheat pizza crust or regular. Haven't yet tried grilling it but look forward to trying that next!
